Air Fryer Beer Battered Fish Tacos

Beer Battered Fish Tacos

Fish:                                                                      
2 cod filets or other white-fleshed fish
2 eggs
1 1/4 cup lager beer
1 1/2 cup all-purpose flour
3/4 tsp baking powder
salt & pepper

Topping:
1/2 c. of corn (fresh or canned)
2 tbsp diced red onion
1 small tomato (diced)
1 cup iceberg lettuce (shredded)
juice of 1 lime
1/4 c. fresh chopped cilantro
1 diced jalepeño pepper (optional)
salt & pepper

4 small tortillas


Directions:
In a medium size bowl whisk together eggs and beer, then set aside. In a separate medium bowl whisk together flour, baking powder and ¼ teaspoon each of salt and pepper.

Slice the fish filets in half so that you have 4 pieces. Dip fish in batter, then dip into flour mixture, coating all sides.

Lightly oil the bottom of the air fryer basket to prevent sticking. Air fry for 10-15 minutes on 400◦F.

Combine topping ingredients and set aside.  Check fish and cook until golden brown. Serve fish and toppings with tortillas.
