Tender Pot Roast

Tender Pot Roast

• 2 Tablespoons vegetable oil
• 1 (3 pound) Boneless beef chuck roast, trimmed
• Ground black pepper to taste
• 1 Medium onion, cut into 4 wedges
• 1 (14.5 ounce) Can beef broth
• 1 1/2 Tablespoons Worcestershire sauce
• 4 Carrots, peeled and cut into bite-size pieces
• 4 Large potatoes, peeled and cut into bite-size pieces

1. Heat oil in pressure cooker using the Brown/sauté preset. Brown roast on all sides in the hot oil. Season with pepper and salt.

2. Pour in beef broth and Worcestershire sauce, add the quartered onion, and seal the lid.

3. Cook for 30 minutes. Release the steam and carefully add carrots and potatoes.

4. Lock lid in place and with the {Pressure +/-} button manually set time for an additional 15 minutes.

5. The pressure cooker will start to heat up and cooking cycle will start as soon as it has reached pressure temperature.

6. After the cooking cycle is over, let the pressure drop before you release the steam.

7. Enjoy!
