Air Fryer Lemon Glaze Blueberry Scones

Scone Ingredients:

- 2 CUPS all purpose flour

- 1 TBSP baking powder

- 1/2 TSP salt

- 2 TBSP sugar

- 5 TBSP unsalted butter (chopped/broken)

- 1 CUP fresh blueberries

- 1 CUP heavy cream


Lemon Glaze Ingredients:

- 1/2 CUP lemon juice

- 2 CUPS powdered sugar

- 1 TBSP unsalted butter

- 1 Zested lemon


Scone Directions:

In a large mixing bowl, combine the flour, baking powder, salt, sugar, unsalted butter, use forks to mash the butter and sift together the ingredients. 

Add the blueberries and carefully fold together with forks. Be careful not to burst the berries as the strong color will bleed into the dough.

When mixed well, carefully form a well in the center with your hands and pour in the heavy cream. Mix well(be careful not to burst the berries when mixing). The dough should resemble a crumby texture.

add some flour to your work area and drop the dough. Work the dough into a flat rectangle, then cut into even pieces. Form each dough portion into a ball and place onto the air fryer rack.

Set the Turbo air fryer to 410F degrees and bake for 5 minutes on each side. you can brush a little butter midway through cooking. 


Lemon Glaze Directions:

in a medium glass/microwavable bowl, pour in 1/2 lemon juice, powdered sugar, unsalted butter, and zest of 1 lemon. mix well, then place in microwave for 30 seconds. Carefully remove and whisk into a smooth, creamy, texture. Serve with warm glaze
