Pressure Cooker Berry Cobbler Recipe

Mixed Berry Cobbler:


Berry Filling:

12 Strawberries

1 cup of blueberries

2 Tsp. lemon juice

¼ cup brown sugar

¾ cup of water

¼ cup of white sugar

¼ Tsp. Cinnamon

3 Tbsp. corn starch


2 Cups pancake mix

½ cup milk

3 Tbsp. melted butter

1 Tsp. Vanilla

3 Tbsp. white sugar

½ Tsp. Cinnamon



  1. To create the filling mix the berries, sugar, brown sugar, cinnamon, lemon juice, cornstarch and water in a large bowl. Once mixed pour into the pressure cooker pot. (Note: You may need to add additional water to allow pressure to get high enough to cook mixture.) 


  1. To create the topping, combine the pancake mix, milk, butter, vanilla, and 3 tablespoons of sugar in another bowl.


  1. In a separate bowl combine the 1 ½ tablespoons of sugar and ½ teaspoon of cinnamon.


  1. To assemble, place large scoops of topping on the surface of the berry mixture and sprinkle with the cinnamon and sugar mix.


  1. Lastly, secure the lid of the pressure cooker and close the pressure valve. Cook on high pressure for 10 minutes. Enjoy.
