If you've never thought about putting watermelon on the grill, then you've got to try this! Enjoy the sweet, juicy crunch of watermelon, now with that extra sear on the outside. Coupled with some arugula and feta cheese and you have the makings of a delicious appetizer, or a light lunch!
Ingredients:
1 watermelon
2 cups arugula
Olive oil
Salt
Pepper
Directions:
1. Stand the watermelon half cut side down on a cutting board and slice away the rind, leaving a solid block of melon. Turn the block on its side and cut it into 8 squares, roughly 3 by 3 inches and 1-inch thick.
2. Place on hot grill pan. Grill each side about 3 minutes until grill marks appear; transfer to a plate and season with salt.
3. To put your salad together add your baby arugula on a serving plate, followed by a grilled slice of watermelon in the center, and top with a tablespoon of crumbled cheese. Add another watermelon slice and another tablespoon of cheese.
4. Finish each salad with a very light drizzle of balsamic reduction. Serve immediently and enjoy!
