Quarantine has created some amazing home bakers. During this time it helps to stay busy and a lot of us have been making banana bread lately. It is an all time favorite easy quick bread recipe you can make while being at home.
Today we're using our 12.7 QT Air Fryer Oven Deluxe
The 12.7 QT Air Fryer Oven Deluxe is also a fully functional Air Fryer Oven. You can fry using little to no oil, you can bake, roast, toast, and even rotisserie a whole 6-pound chicken! All cooking presets have an adjustable temperature range from 90F – 400F, and adjustable time from 1-60 minutes.
3/4 cup white-whole wheat flour
1 teaspoon cinnamon
1/2 teaspoon Kosher salt
1/4 teaspoon Baking soda
2 medium ripe bananas, mashed (about 3/4 cup)
2 large eggs, lightly beaten
1/2 cup granulated sugar
1/3 cup plain nonfat yogurt
2 tablespoons vegetable oil
1 teaspoon Vanilla extract
2 tablespoons toasted walnuts, roughly chopped
Line the bottom of a 6-inch round cake pan with parchment paper; lightly coat pan with cooking spray. Whisk together flour, cinnamon, salt and baking soda in a medium bowl; set aside.
In separate medium bowl, whisk together mashed bananas, eggs, sugar, yogurt, oil and vanilla. Gently stir wet ingredients into flour mixture until well combined. Pour batter into prepared pan and sprinkle with walnuts (or your favorite topping.)
Heat to 310° degrees for 30 to 35 minutes and then place your pan in air fryer and cook until browned. Turn pan halfway through through cook time.
Insert a wooden pick in the middle making sure it comes out clean. Bring to a wire rack to cool in pan for 15 minutes before turning out and slicing.
