- Olive oil-flavored cooking spray
- 1 tsp Italian seasoning
- 1 ½ Tbsp all-purpose flour
- ¾ tsp table salt
- ¾ cup panko breadcrumbs
- 2 medium zucchini, cut in quarters lengthwise and then halved
- 2 egg whites, whipped until froth
1.) In a small bowl, mix Italian seasoning, flour, and salt. Place breadcrumbs in a separate small bowl.
2.) Dredge each zucchini fry in flour mixture, then dip into egg whites. Dredge in breadcrumbs and place into air fryer basket. Repeat.
3.) Spritz lightly with cooking spray. Air fry for 5 minutes at 400°. Turn, then air fry for 5 additional minutes. Enjoy!
