These muffins offer a sweet, crumbly and delicious taste that are perfect to snack on or eat while you’re on the go.
1 cup cranberries, diced
8 tbsp sugar
1 ¾ cup flour
3 tsp baking powder
½ tsp salt
1 egg, large
¾ cup milk
1/3 cup vegetable oil
1 tsp orange zest, grated
1 tsp lemon zest, grated
Dice up your cranberries and place them in a medium mixing bowl. Then, sprinkle 2 tablespoons of sugar on the cranberries and mix well.
In a large mixing bowl, combine the flour, remaining sugar, baking powder and salt and mix well. Add in the egg, milk and vegetable oil, stirring to mix together. Fold in the diced cranberries, lemon zest and orange zest.
Spray your muffin tin with non-stick cooking spray and fill the muffin tins with batter ¾ of the way. Place the muffin tin in the air fryer basket and air fry at 325°F for 15 minutes. Use a toothpick to ensure your muffins are cooked all the way through.
Using oven mitts or tongs, take the muffin tin out of the air fryer basket and let cool. Take the muffins out of the accessory, set them on a plate and serve!
