Steak and Potatoes

  • Red potatoes
  • 2 Tbsp. extra virgin olive oil, divided
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper
  • ½-1 lb flank steak
  • 1 Tbsp balsamic vinegar
  • rosemary sprigs

1.)   Cut red potatoes in half-inch slices. Use a cookie cutter or a small knife to cut the potatoes into heart shapes. Transfer to a pan or a small bowl.

2.)   Add 1 Tbsp. of olive oil. Season with garlic powder, onion powder, paprika, and salt and pepper to taste. Place on air fryer oven rack.

3.)   Place flank steak into shallow pan. Coat the top with 1 Tbsps. of oil, balsamic vinegar, and salt and pepper to taste. Place the pan on an air fryer oven rack.

4.)   Place the steak on the top level of the air fryer oven and the potatoes in the center level. Cook at 400°F for 5 minutes. Flip the steak and cook five additional minutes. (Note: This will produce a medium rare or rare steak. Add time for more well-done meat.)

5.)   Remove the steak from the oven. Cook the potatoes for an additional 10 minutes at 430°F while the steak rests. Remove from oven and enjoy!
