1. Sausage & Egg Breakfast Pockets

Start off your day right with Air Fryer Sausage and Egg Breakfast Pockets, made with 2-ingredient dough that is insanely easy!
- 1 cup Greek yogurt
- 1 cup self-rising flour
- Garlic powder, to tasteFor filling:
- 5 eggs, scrambled
- 1 egg + 1 Tbsp of water to make egg wash
- 6 oz cooked turkey sausage
- 1 cup fat-free shredded cheese
1.) Combine all dough ingredients into a medium-sized bowl. Knead together by hand or using the dough hook attachment of a stand mixer. If the dough is too sticky, add up to one tablespoon of flour.
2.) Divide the dough into quarters. On a lightly floured surface, roll out into circles.
3.) Add ¼ of the scrambled eggs and ¼ of the sausage each of the rolled-out circles. Top with ¼ cup of cheese.
4.) Pinch the circles closed to form pockets. Brush each pocket with egg wash.
5.) Air fry at 370° for 6 minutes. Flip and air fry for 6 additional minutes. Enjoy!

2. Shrimp Skewers

For lunch, try some seafood with these Air Fryer Shrimp Skewers! Flavored with citrus marinade and topped with cilantro.
- ½ lb raw shrimp, peeled and deveined
- ½ tsp garlic puree
- ½ tsp paprika
- ½ tsp ground cumin
- Juice of 1 lemon
- Salt, to taste
- 1 Tbsp cilantro, chopped
- 1 lime
1.) Soak 4-6 wooden skewers for 15-20 minutes before needed.
2.) Mix lemon juice, garlic, paprika, cumin, and salt into a bowl. Add shrimp and stir to evenly coat.
3.) Thread shrimp onto the skewers. Place skewers into air fryer. Do not overcrowd basket.
4.) Cook at 350° for 4 minutes. Flip and cook for 2 additional minutes.
5.) Sprinkle with cilantro. Serve with lime slices. Enjoy!

3. Chicken Parmesan

For dinner, we have some chicken parmesan. This lightened-up version of a classic comfort food air fries rather than deep-fries to give the same crunch with a fraction of the calories.
- 8 oz thin-sliced chicken breast
- 3 Tbsp seasoned breadcrumbs
- 1 Tbsp grated Parmesan cheese
- ½ Tbsp butter, melted
- 3 Tbsp reduced-fat mozzarella cheese
- ¼ cup marinara
- Salt & Pepper, to taste
1.) Combine breadcrumbs and parmesan cheese in medium bowl.
2.) Salt and pepper chicken breasts, then lightly rush with melted butter. Dip into breadcrumb mixture.
3.) Place chicken into air fryer and lightly spritz with oil.
4.) Cook for 6 minutes at 360°. Turn and cook for 6 additional minutes.
5.) Top each with 2 Tbsp of marinara sauce and 1 ½ Tbsp of shredded mozzarella cheese. Cook for 3 more minutes, or until cheese in melted. Enjoy!

4. Zucchini Fries
3 Freestyle points per serving
Finally, if you find yourself a bit puckish between meals, we would wholeheartedly suggest these Air Fryer Zucchini Fries.
Olive oil-flavored cooking spray
1 tsp Italian seasoning
1 ½ Tbsp all-purpose flour
¾ tsp table salt
¾ cup panko breadcrumbs
2 medium zucchini, cut in quarters lengthwise and then halved
2 egg whites, whipped until froth
1.) In a small bowl, mix Italian seasoning, flour, and salt. Place breadcrumbs in a separate small bowl.
2.) Dredge each zucchini fry in flour mixture, then dip into egg whites. Dredge in breadcrumbs and place into air fryer basket. Repeat.
3.) Spritz lightly with cooking spray. Air fry for 5 minutes at 400°. Turn, then air fry for 5 additional minutes. Enjoy!
