Air Fried Italian Breaded Eggplant

Learn how to make this quick and easy eggplant recipe in your air fryer! We love making vegetarian recipes for you and hope this becomes a favorite for dinner. 

 

 

 

 

 Ingredients:

 

1 medium eggplant

1 tsp. salt

1/2 cup all-purpose flour

2 eggs

1 cup Italian breadcrumbs 

1/4 cup olive oil

1 lb. fresh mozzarella cheese, sliced into rounds

1 jar spaghetti sauce

 

 

Instructions:

 

1. Slice eggplant into disks

2. Place eggplant disks on paper towels to dry. Sprinkle salt on both sides and wait about 20 minutes

3. Take out 3 bowls. In the first bowl, add the flour

4. In the second bowl, mix together breadcrumbs and olive oil

5. In the third bow, beat 2 eggs

6. Coat each disk in flour, eggs, and breadcrumbs

7. Place in air fryer and cook at 390F for 8-11 minutes

8. Coat each eggplant with sauce and mozzarella cheese

9. Place basket back in air fryer and cook at 350F for 3-5 minutes

10. Enjoy!
