2 oz Bacardi white rum
5 oz raspberry puree
½ oz lemon juice
¾ oz rosemary simple syrup (recipe below)
2 tsp Bacardi 151 (optional)
Dash of cinnamon (optional)
Simple Rosemary Syrup
1 cup sugar
1 cup water
2 sprigs rosemary
Boil water, then add the sugar and stir until dissolved
Pour syrup into bowl and add rosemary
Allow syrup to cool and infuse for 30-60 minutes
Remove rosemary. Store in fridge.
Place all the ingredients in a cocktail mixer.
Shake for 20 seconds to chill.
Strain the cocktail into a stemmed glass with a wide mouth.
Place a cocktail spoon over the surface of the cocktail and carefully layer the 151 over the cocktail.
VERY CAREFULLY, with a lighter, light the top layer of the cocktail. For a dramatic effect, sprinkle cinnamon over the top of the cocktail for a spark. OR If you prefer a safer option, just light a sprig of rosemary on fire for a smoky effect.
