This dish is a great holiday twist on the traditional hummus and is perfect as a healthy Halloween treat or Thanksgiving appetizer!
Ingredients:
Hummus:
1 - 15 oz. can chickpeas, drained
1 cup pumpkin puree
¼ cup tahini
2 cloves garlic
1 canned chipotle
2 tbsp olive oil
½ of lemon zested
juice of 1 lemon
½ tsp smoked paprika
¼ tsp smoked salt to taste
¼ tsp cayenne
Garnish:
drizzle of olive or lemon oil
sprinkle of smoked or coarse salt
sprinkle of pepitas
Directions:
Combine all of the hummus ingredients together in a blender. Blend until smooth and creamy. Add more oil or lemon if desired.
Pour into a serving bowl. Garnish as you like. Serve with your favorite chips!
